Seasonal rooftop produce takes centre stage at The Calile’s Lobby Bar
The Lobby Bar at The Calile Hotel in Fortitude Valley is serving a menu that blends modern luxury with ingredients harvested from its own rooftop garden. Executive Chef Raul Hinkson, who brings over 30 years of experience from Michelin-starred kitchens, now oversees the kitchen at this James Street venue.
The current menu highlights the subtropical climate of Brisbane, featuring dishes like kingfish crudo with rooftop chilli and a 300g wagyu rib eye finished with herb butter grown on the hotel’s roof. The establishment operates as an all-day dining anchor, serving breakfast, lunch, and dinner to both hotel guests and locals.
A menu rooted in local harvests
Ingredients for the current offerings come from a close network of local growers and the hotel’s organic rooftop garden. This produce includes rooftop basil for pesto pasta, rooftop chilli for crudo, and fresh herbs for the steak finishes. The menu also features a raw bar of oysters and K’gari prawns, ensuring all seafood is Australian sourced.
For those seeking lighter options, the menu includes a cucumber and melon salad with goat curd and rooftop rocket. Heavier dishes like the braised brisket burger and truffled leek and potato soup are also available. The design of the space, created by Brisbane practice Richards and Spence, leans into the local climate with breezeways and lush planting that spill into Ada Lane.
Operating hours and pricing
Dining at the Lobby Bar is available from Monday to Friday, with breakfast served from 6:30 AM to 11:30 AM. Lunch runs from 12:00 PM to 3:00 PM, and dinner is served from 4:30 PM to 9:00 PM. On weekends, brunch is available from 7:00 AM to 3:00 PM, with dinner continuing until 9:00 PM.
Prices for the menu items reflect the quality of the produce. The Wagyu Rib Eye Steak & Chips costs $65, while the K’gari prawn pasta is priced at $40. Smaller plates like the K’gari Prawn Slider are $12, and the house-made focaccia is $10. A 10% surcharge applies to all food and beverage on Sundays, and a 15% surcharge applies on public holidays.

The Lobby Bar is positioned at the entrance of the hotel on James Street, offering a polished and relaxed feel that matches the rest of the resort.
