New Restaurant and Record Bar Opens in Fortitude Valley

A new dining and music destination has arrived in Fortitude Valley, taking over the heritage-listed Apothecaries Hall at 690 Ann Street. Never Enough is the latest venture from Tyla Dombroski and Trad Nathan, the couple behind the nearby live music venue Crowbar. The space combines a full restaurant menu with a record bar, aiming to serve patrons before and after shows across the road.

The name reflects the owners’ philosophy on good company, wine, and food, while also nodding to US rock band Turnstile’s 2025 album. As reported by Broadsheet, the venue is stocked with around 300 records and features Audio-Technica turntables for guests to enjoy. DJs will perform on Friday and Saturday nights to keep the music flowing.

Menu Highlights and Late-Night Eats

Head chef Trent Lymn, formerly of The 203, has curated an opening menu that leans heavily into dry-aged proteins and shareable plates. Early options include Gildas with smoked mortadella and anchovies, and fainá topped with spring onion and cheese. The menu also features ’nduja with truffled honey, fried artichokes with white bean and salsa verde, and tempura zucchini flowers with tomato spice.

For meat lovers, the kitchen offers a dry-aged beef tartare with fermented chilli and waffle chips. There is also a 21-day dry-aged cheeseburger served with tarragon mustard and champagne onions. Steak specials will feature cuts from top producers including Copper Tree Farms, Chauvel, and Riverine.

When the clock hits 10pm, a dedicated late-night menu kicks in to support the night-time crowd. This includes a rump cap sandwich with red wine onions and a Moreton Bay bug and king prawn roll. Patrons can also order the “Never Enough Midnight Snack” set menu, which includes the dry-aged cheeseburger, fries, and Methode Traditionnelle bubbles for $59.

Wine, Cocktails and Heritage Interiors

General manager Mikey Pattison oversees a drinks list that prioritises wine, with a strong focus on Australian producers. Burgundy is also well represented, a particular favourite of co-owner Trad Nathan. The bar also offers a considered selection of cocktails, vermouth, and amaro for those looking for something different.

The interior design respects the building’s history as a two-storey heritage site. Working with Kit Bettison from Alida & Miller, the team has highlighted the original brickwork, polished concrete, and timber. The space is softened with maroon tiling, white curtains, and wine bottles dotted throughout the room.

Opening Hours and Contact Details

Never Enough is open Wednesday and Thursday from 5pm until late. On Friday through to Sunday, the doors open at midday and stay open until late. The venue can be reached on 0431 128 106 or via their social media handle @neverenough.bar.

With its location directly opposite Crowbar, the venue is positioned as a natural stop for music fans. “We want this to be somewhere people can go before a show for a really nice meal and a drink, or come after,” Dombroski says. The late-night menu is specifically designed to encourage that flow between the venue and the restaurant.
